Frank Castelli
1921-2002
Frank
E. Castelli, 81, of Holland, an accomplished chef, died Tuesday in Holy Redeemer Hospital, Meadowbrook. Castelli, formerly
of Hershey and Harrisburg, had been a certified executive chef
and a mentor to many culinary professionals in the hotel industry.
He was a
founding member of the Central Pennsylvania Chefs Association and a past
president of the Delaware Valley Chefs Association.
“Frank Castelli was a man with a very big heart and very proud of the
culinary profession,” said Kathy Salemno, a former protégé.
“He was a true professional,” Salemno said, “always lending a hand
with the local chef chapter dinners and being a mentor to many a culinary
apprentice.
“Frank was always there. We talked many times about the good old days and
the start of the acceptance of women in the culinary profession. He helped
me get a scholarship to the Culinary Institute.
“I will surely miss him.
He was a great mentor and grandfather image to me.”
Castelli was a member of the American Culinary
Federation and an honorary life member of its Chicago Chefs of Cuisine
Association; a member of the American Academy of Chefs; and an honorary life
member of the Greater Lehigh Valley Chefs Association and Les Amis
d’Escoffier Society of Chicago.
He was an Army veteran of
World War II and a member of St. Bede the Venerable Roman Catholic Church
and the British Air Depot 2 Association.
Surviving are his wife, Margie E. Glass
Castelli; a daughter, Marcia L. Guzauskas of Gaithersburg, Md; a son, Gregory E. of Sellersville; a
brother, Sistillio P. of Hershey; and four grandchildren.

Randall's Cooking School Cancellation Policy: Space is limited.
FIRST COME-FIRST SERVED. In order to reserve your space in a class, full
payment is required at the time of registration. A credit will be issued if the
registered student cancels no less than seven days prior to the beginning of the
class. If you cannot attend, SEND A FRIEND to take your place. Students
canceling after seven days will be charged the full tuition and no credit will
be given.

Randall's Cooking School Make-up Policy: Make-ups are allowed for
Basic Cooking Series classes only. Chef Joe Randall's Cooking School can
accommodate no more than two make-up students per class meeting in order to
maintain the ideal student- instructor ratio. Please call the school to schedule
your make-up prior to the class date. Students must call Chef Joe Randall's
Cooking School to request make-up registration within 6 months of the missed
class.
