With a deep-rooted love of Southern food, Savannah Chef Joe Randall teaches basic Southern cooking techniques and serves meals built around authentic African-American, Low Country, Georgia Coast and Southern cuisines at his Waters Avenue cooking school. A longtime veteran in the culinary industry and an award-winning chef, Randall is a member of the American Culinary Federation and the American Academy of Chefs; he is also a founding board member of the Southern Foodways Alliance.
Randall’s demonstration dinners offer participants four-course meals, so he advises participants to arrive prepared to eat. “These are not tastings, so don’t come stuffed,” he says. Randall also offers techniques and skills classes.
His menus feature mouthwatering dishes such as Sea Island smothered shrimp and creamy stone-ground grits, Gullah crab rice, lobster cakes with lemon butter sauce, butter beans and okra, and Georgia peach cobbler with vanilla ice cream. Be sure to look for his gumbo class, showcasing how to prepare a different type of gumbo each month. Popular with families celebrating birthdays and anniversaries, his classes have a maximum of 20 participants. —JH
